Since her days as the studious girl next-door Jessie Spano on the popular teen show Saved by the Bell, Elizabeth Berkley has been turning men's and women's heads around the world. How does she keep her trim, sexy figure? By shunning meat and being vegetarian, of course!

Elizabeth Berkley's adElizabeth, a strict vegetarian her whole life, was the original Lettuce Lady. That's right—she started the trend by sending a postcard with her ad and a note to every restaurant in the U.S.' 10 fattest cities urging them to do their part to help diners slim down by beefing up on vegetarian selections.

Many vegetarian foods are naturally low in fat but high in essential nutrients—the perfect combination for maintaining a slim physique. Because vegetarian diets work well for long-term weight loss, it's no surprise that adult vegans are, on average, 10 to 20 pounds lighter than adult meat-eaters.

Elizabeth's note to restaurants helped spread the message that going vegetarian is the key for weight-loss success, but she didn't switch to meat-free meals for just her body—she did it for animals too! "I went vegetarian because I don't want to be the cause of any animal losing his or her life," said the actor.
